Just wondering how to save the content that the student writes for the instrctor to see.. same thing with the Cornell Notes. How can we make sure that the content stays after closing the activity?

You could, for instance, search this forum for the answers with 50 % easily retrievable at https://h5p.org/node/1252974

You as the teacher will not see the texts at all, because neither Cornell Notes nor Structure Strip submit anything, because that's not part of their purpose.
