Expansion of Review categories in Documentation tool

I am using the documentation tool at the moment for teacher students evaluations as well as student self-evaluation. The only problem at the moment is that the three-fold review categories are not enough and I would need a five-fold category. So from something like "Needs improvement" - "Very good" in 5 steps. Would this be possible to do and if yes, how?
