Interactive video - multiple choice question - options in black

Hi, I've created an interactive video and want to use a Multiple Choice question.
When I create it, the options are in black and I can't seem to change them. Can anyone help?

I don't have the same issue with Single Choice Set.

Changing Look or Position of Summary / Submit buttons

Can a developer change the look or position of the Summary & Submit menu option (at the end of an Interactive Book containing a Question Set or the Submit button that appears after selecting it?
My users have asked that it be made much more prominent as many learners have inadvertently skipped doing it.
